Ginger and orange teacake

Last week I decided to give the Ginger and orange teacake over at Design Sponge a whirl. I absolutely love ginger and Rachel Khoo was right to pair it with orange. I have a pretty sweet tooth so I also added an orange glaze using juice from half an orange, a cup of icing sugar and a few gratings worth of orange zest.

I had a bit of trouble with the oven again for this recipe. After the 40minutes I put the knife in and it still had a liquid center. I ended up putting it back in for 10minute intervals (checking after each) 3 times. You can see from the photos the crust is a bit too thick and crunchy but it still tasted great! I’ll definitely be trying this recipe again to perfect it.
